So, the last couple of days I have been cooking a lot. Just trying out some new recipes and kind of creating my own thing out of it. People (my mum and stepdad) seemed to like it! So after talking to my dad who said it would be a could idea to feature it on my blog here I am J Most of the recipes I had to come up with because we literally had nothing in our fridge and I had to improvise. So, if it sounds weird you know why. But to be hones I really did enjoy these recipes, like a lot! The first recipe I am introducing to you guys is my pesto lamb (which I need a better name for! If you have any ideas let me know in the comment). Now let’s get started!
A small disclaimer I am just an amateur so be kind.
What you need:
- 2 gloves of garlic
- Lamb chops (I used 4)
- 1 can of whole peeled tomatoes
- Green peas (as many as you like)
- Salt and pepper
- Butter (a tablespoon)
- Half an onion
- Half a bell pepper
- 6 or 7 cherry tomatoes
Now this is what you do with it:
First things first chop up all your veggies so they are ready for when you need then!
Next up you need to boil some water for the broccoli (because that’s what takes the longest to cook) and then once your water is boiling put the broccoli in (for about 10 – 15 mins)
Then you want to put some oil in a pan and once it starts warming up put the onions, bell pepper, garlic and cherry tomatoes in the pan.
Now we need to get the lam ready so season it with some salt and pepper and then you need to spread some pesto on one side of every lamb chop.
Now once you’re done with that you want to put the lamb chops in the pan pesto side down. Once you have done that you want to cover the other side with pesto too. After 4/5 mins you turn the lamb chops around so the other side can cook too.
Now you want to add some butter to the pan.
Once all of that is done you can start to boil some water for the peas. These only take like 3 or 4 mins to boil.
Now you need to add you’re peeled tomatoes to you pan with the lamb chops. If you like you can add a tiny bit of milk to it. Let that do its thing for a bit and then you are DONE!!
